GENERAL INFORMATION. A typical Vermont sugar house. These structures are used in early spring to boil sap collected from nearby sugar maple trees. Large pans of syrup are heated by wood fires. About fifty gallons of sap are used to produce one gallon of maple syrup. Most of the maple syrup now consumed in the United States now comes from the Canadian provinces, especially Quebec and Ontario.
